Freshwater catfish are fantastic! The meat is white, flakey, and delicious; Fried, blackened, or broiled. Catfish farming is one of the biggest agricultural operations across the South and Midwest. Here's a chart of the comparative sales of fish in 2005 (the most recent figures I could find) Bear in mind that these figures are for farm raised fish and don't include wild caught fish.

Nice one Santaman! I do miss the numerous restaurants in Kentucky that feature catfish as the main fare. Here it is mainly BBQ (pulled pork and beef). Although, a new place has opened close by that features both called the Fishin' Pig.
