Fish and shellfish are probably my favourite meals and I cook it in a many, many, ways but you cannot beat seabass plain fried in butter - simple meals are so often the best.

Oh and @CLEM - try mackerel with horse radish - really delicious :)

I clean my trout and pat the body cavity with some dark brown sugar and black pepper. I put a couple of strips of bacon around the fish and tightly wrap it in a brown paper grocery bag or butcher paper.
Bury the packet about 6" under the coals of a campfire and bake 30 to 40 minutes depending on the size of your fish. Serve with campfire pan bread ( Bannock) or toast.
