Who said that? I have a stainless pan we use a fair bit and will try to use it more and prevent things sticking. I also have a quality 2nd hand pan from my mum I will try.

I'm just seeing what else I should consider, a few years ago I wouldn't have considered a Le Creuset enamleed pan (too trendy for me!) but now it might be the best option.
Pro Cook are just as good as Le Creuset imo. And much cheaper. They're what we use. They come with a 25 year guarantee too.

 
Mine always bounces back by the third pancake.... And truth be told I like the first two piles of yummy mush as much as the properly formed ones!

If batter has stuck to the pan, usually wash & brush it out and start over with some more butter. Seems to fix it.
 
After modifying a couple of 1980’s SS pans for use in a fire I’m on the outlook for more.
Hope you find a pan that suits you. You can cook anything in a camp fire but a good fry up takes some beating.

I can concur with Lodge and Le Creuset for cast iron, and either Le Creuset 3-ply or Tramontina 3 ply for stainless steel - these are my kitchen options, however I can't see any issue with using outdoors, with the caveat about taking care to warm up the cast iron before getting it hot - it'll be slightly more difficult to gauge the heat from an open fire vs a kitchen hob, so this could see the cast iron crack. I've never had any issue with warping with my stainless steel, and no hot spots and these get used daily in the kitchen. I know stainless steel can see food stick depending on what you're cooking, but I've always been able to clean mine up easily afterwards. Having invested to get good quality 7+yrs ago, I don't imagine I'll ever need another set of pans / skillets / etc.

You might be able to get second hand to save money too, or to purchase a higher quality offering at the same price as the more 'disposable' cheap options.
 
On the subject of cast iron, a while back I bought some Cousances casserole dishes second hand for a bargain price. The lady told me that Cousances are as good as Le Creuset but less well known and I believe her!
