250/1000 might be a bit coarse. For the rare occasions you will need 250, you might indeed just use wet and dry paper. Japanese waterstones hold a more distinct advantage when you go into finer grits I think.
 
if your going to pay that amount of money for a waterstone i would go for the axminster 1000/6000 one imoo regards dave
 
i've got the Axminster japanese 1000/6000 and it is brilliant. a good tip is to hold it still in a board with a few pins and remember to flush the surface regularly.
