John came back witht hese two sausage recipes - I hope they work for you

10 lbs meat (venison or lamb)
2 lbs beef or pork fat

Recipe #1
2 T dried parsley
1 T ground coriander
2 T cumin
3 T paprika
1 T cayenne
1 T ground cinnamon
2 T sea salt
1 T dry mint leaves (for lamb)


Recipe #2
2 T black pepper
2 T ground sage
1 T sea salt
1 T cumin
1 T garlic powder
1 tsp mace
1 tsp ginger
1 tsp ground thyme
1 tsp ground basil
1 tsp ground marjoram
2 T fennel seeds

That is alot of meat Red, how many sausages do you get out of that?
I'm thinking of making the square sausage by sreading the ingredients evenly on a tray and cooking it slowly that way!
I don't have the means to make proper sausages!:rolleyes:
What do you reckon?
