John came back witht hese two sausage recipes - I hope they work for you

10 lbs meat (venison or lamb)
2 lbs beef or pork fat

Recipe #1
2 T dried parsley
1 T ground coriander
2 T cumin
3 T paprika
1 T cayenne
1 T ground cinnamon
2 T sea salt
1 T dry mint leaves (for lamb)


Recipe #2
2 T black pepper
2 T ground sage
1 T sea salt
1 T cumin
1 T garlic powder
1 tsp mace
1 tsp ginger
1 tsp ground thyme
1 tsp ground basil
1 tsp ground marjoram
2 T fennel seeds

thanks for the recipes red, am going down your end to visit family some time in jan feb, and will bring you down a jacketed carcass, for you to make some jerky and sausage your self.

That is alot of meat Red, how many sausages do you get out of that?
I'm thinking of making the square sausage by sreading the ingredients evenly on a tray and cooking it slowly that way!
I don't have the means to make proper sausages!
What do you reckon?
