Because they're mostly abbreviations, not acronyms. An acronym is an abbreviation which is pronounced as a single word, such as laser, Nato, Nasa, etc. What you listed in your OP are abbreviations.

NASA and NATO are pretty obvious but how many people remember (without looking it up) what LASER stands for? How about Cop?

CEO is an abbreviation but not an acronym. Wikiepedia isn't the last word on everything: Acronym; a word formed from initials, as Anzac, laser, scuba, pronounced as words. Oxford Dictionary for Writers and Editors, OUP, 2000.

My 1970 edition Hart's Rules (my oldest copy) doesn't even mention acronyms, just abbreviations. In this edition abbreviations are recommended to be set with full points, but by 1983 (my next oldest copy) the full points were to be omitted. Usage changes, I agree, but I still think abbreviations is the correct term for what you searched for as acronyms. But then again, I seem to be unusual in believing that there, their and they're are distinct and separate words, so perhaps I'm old-fashioned.

I was taught the this way also. The mingling of "there" "Their" and "they're" (and similar word groups) has always been a problem but I think our over-reliance on technology (spell check) has multiplied the problem.

Cop isn't an acronym, this is a case of reverse-engineering a false origin for a supposed acronym. Cop (as a slang noun for policeman) is short for copper, which itself is derived from cop, meaning to catch.

Actually when I went through the police accademy they taught us copper was an early reference to the copper badges. I never believed that one but the ref as an acronym is older than I am so I did tend to believe it. You're probably right though.

Interestingly (and perhaps rather geekily, for which I apologise in advance), it has its origins in the French word caper, meaning to seize, and which is also a slang word for organised robbery, although I don't know for certain that the derivation is connected.
