Maybe if we valued sugar more, we wouldn't so abuse it's use. In the 16th century it was still considered medicinal and was expensive. Reading your thread one can easily see why.

The next step in our quest for self sufficient sugar is to harvest seed

The tall seed heads did "flop" over and formed a dense carpet

The individual seeds were starting to drop (although some were ripe, others were green), so we harvested the flower spikes

Digging out the beet it was amazing to find just hollow shells - all that energy had gone into the flower spikes

The ripe seeds look a lot like the commercial seed we started with

We will now dry the seed, harvest and re-grow from our own seed to prove that we have bred true - its a long old job testing all these theories out!
