Just because we were talking about geese, you can see why the Fen people did okay in the Winter from wildfowling. This is an average sized skein flying North this morning. Noisy things.

I haven't but, because of salmonella etc. Would certainly get it's internal temperature up to pasteurisation temperature prior to drying.

Yup - that thought is what is holding me back too..... I reckon cooking first is the way to go, i'll let you know if I ever muster the guts to give it a try.
