Question for the knife makers

Not that I am making knives, but what is the best way to finish maple handled knives? I have one I was given a while back, and its just sat there, not doing anything, but it was unfinished (no oil or anything) and was wondering what is the best way to go forward. I have polished the blade up using my whetstones so that's nice and sharp, but really want to get a good finish on the wood. As it isn't full tang (tang sits inside the wood), I may even re-handle the knife myself with some local maple, however like I said, just curious what is best to use with it if I either replace the handle or keep the one I have.

Sand it to 1000g with wet and dry... oil with Danish oil or boiled linseed... let cure, buff it.

Would Ronseal refined Danish oil be OK for it?

Should be mate, yeah. I use Colron Refined danish oil, so i can't see there being any real difference.

Thank you I may re-handle the knife with local maple, depends on my time constraints, but I'll definitely go get some ronseal (screwfix is down the road from me).
