Try and get a copy (off eBay maybe) of "Watkin's last expedition" written by F.Spencer. Chapman (in fact get any book by Chapman)

Its about a British expedition to Greenland many years ago; and what they took with them in terms of food and equipment is well documented. A small team, under funded, with basic rations, but they did come out (well, except for one, but I won't spoil the tale) alive. Using basic food stock, the help of locals, plus hunting and fishing, I believe that this team underwent a trip few of us could today, tough buggers

One area where I would not compromise is water purification...

No problem, I have never experienced any problems from drinking straight off the lakes and streams. I don't know of anyone purifying their water over here.
