The golf course is just across the road from the end of our street. There are so many deer now that they're being seen (and hit by cars).
To the deer the road is just a wide pathway, but the woods and the pathways and parks are all potential foraging places.
Lanarkshire is green, very green, even post-industrial sites are very green.

So when you asked about the deer and their diet.....it's just what's growing, as in the photos, which is the path and burn right alongside my garden.
 
Golf course or woodland or anything in between the deer will taste different depending on the season as they move from one food resource to the next. I let mine hang for a maximum of 7 days and then do all the butchery at once as it does lose its flavour if left any longer.

Touching on another reason that I love France so much. Game still very much part of the regular diet in most regions. Going back a few years now, when I was over there more than I am now, I actually had a language and social issue in refusing offers of the bounty of the chasse. Getting across that you're grateful, support their traditions and enjoy a nice piece of meat as much as the next carnivore but have a freezer the size of car's glove box and will be off back to Belfast at the end of the month was tricky. Google translate has come a long way.
