How do you judge the quality of the clay that you find?

If you can roll it up and form it into a ring without it cracking, that's generally a good indicator. Depends how wet it is of course. Should also be able to tell if it's especially smooth or gritty just by rubbing it between your thumb and forefinger (you want smooth, generally).
