It's an American recipe, they seem to have different sized cups over there.
2 eggs
1 1/4 cups milk
1/4 cup vegetable oil
1 1/2 cups yellow cornmeal
3/4 cup flour (I took this to mean plain flour)
1 teaspoon salt
1/4 cup white sugar (I used brown sugar)
2 1/2 teaspoons baking powder
I added a healthy dose of nutmeg and cinnamon, and a load of chopped peanuts, almonds and walnuts.
Beat eggs, milk and oil together.
Add all dry ingredients to wet and mix well.
Pour mixture into greased cake pan.
Bake 400F for 25-30 minutes
Are the Goats your own?? i ask as Goat meat at least down my way isn't the easiest thing to get hold of. As Goat has a bit of a reputation for a stronger more mature flavour I'd be interested if you felt this was taste wise , good.?
No, our local butcher has a herd (or is it a flock?). I am considering getting some this year though, if possible.
I really like goat, but as you say, it can be quite strong. My partner likes the jerky, but said it definitely tastes of goat. I marinaded it in quite strong flavours, paprika, chinese five spice and mixed spice, which worked well.
I will make a larger batch at some point. I'll let you know when, and if you want some I'll post it down to you.
