Cherries

There was a Romanian maker of knives on here called Hellize a while ago. I knew him quite well and he sent me some alcohol he’d distilled from his trees. It was like the finest, highly alcoholic kirsch I’ve ever tasted. It was so strong in alcohol both my wife and I had to sit down immediately after taking a nip. I used a splash on the Christmas pudding and nearly took my eyebrows off, blue flames licked across the table. It was good stuff. :D

As there seems to be strong indication that I am going to be the Cheery Cherry King again this year from the amount of fruits already forming I'm keen to get this abundance given the TLC and fermentation it deserves.

Any idea if there was a recipe from Hellize or not?

EDIT- Was it this stuff ?

No, it was clear like schnapps, highly distilled almost pure alcohol with an almondy taste after the mouth burn had relented.

Cherries- they are back in abundance.

Just made some Cherry Brandy which I will have for Xmas.


I know the stones themselves contain a precursor to cyanide , but am I correct in thinking you can make something tasty from the uncracked pips alone?? Ideas. Recipes. Thanks.

I have a personal hate for cherries this year. I have no choice to park my car under a cherry tree. Which has had a bumper crop this year.
Sick of cleaning the blood ( looks like it) off my car daily from June to beginning of August.
White car or was !
 
I'm sitting here with my breakfast, and my Husband has brought me in cherries :D

The only fruit that I think I might prefer are ripe pears.

I love that British fruits are seasonal, that we spin through the year and it's just one after the other kind of thing.
Just now it's strawberries and cherries.
My Autumn fruiting rasps are just starting to produce stems of fruits though, and Himself is gorging on fresh brambles every day. He brings me in bag loads :)

Apples and pears are ripening though :) and plums.

I'm sure I've told this before but....

Some years ago (and maybe still), my Dad would make sloe vodka in the usual manner of throwing the fruit in a bottle. When done he would then make jam from the flesh but also then do a fresh bottle of vodka with just the stones - he called it white sloe vodka. The produce was all given away with donations to go towards supporting well digging charities and the like. He said that the white sloe vodka was extremley popular. So much so, I've never tasted it.

I mention this because a quick google of 'sloe stone cyanide' and then 'cherry stone cyanide' gives he same answer of them having amygadlin in them. I'm not going to say that white cherry vodka/brandy/whatever is safe but it might be worth more investigation....

Don't think you have ?? But its interesting - I am ( lets face it.. " will " ) end up making some but the question in reference i die in my sleep or foam from the mouth ( more than normal ) does make me a little concerned - i can make it and in theory I can drink it - maybe just the once..

I'll brew some up I guess and see if I can do some additional research in the mean time or end up inviting people to try before I do ( joke! )
