Burdock and Nettle Tagine...

With Reindeer salami.

Ingredients
1Foraged Burdock root,peeled then sliced
A good handful of Nettle tops
1 Onion chopped
handful and a bit of easycook Rice
tbsp of dried mixed fruit
1Chicken stock cube
1pkt of mini Reindeer salami sliced
1/2 tsp of Cumin seeds
A good pinch of Chilli flakes
A couple cherry tomatoes chopped
Water
Olive oil.
Method.
Heat up pan then add Olive oil,next add the Onion and Burdock,
fry gently until the Onion is soft,now add your Cumin seeds
plus Chilli flakes, fry to release their aromas.
Now add your Rice,dried fruit,stock cube and enough water to cover
the ingredients,simmer until the rice is tender,add more
water during cooking if needed.
A few moments before serving add the Salami and Nettle tops,plus tomatoes
cook until the Nettles are just wilted so as the keep their flavour.
Serve.

This recipe would serve two people, but if you are a greedy git like myself you,ll
tell your camp mate to go cook their own tea:D

I made this up a couple of weeks ago whilst out lazing about in the hammock.
