Good Morning All,

Thought I'd share a recipe plan with you. We had a course for scout leaders last weekend with a bit of a cooking competition, here's what our team did:

Main course:
Pasta carbonara with Chorizo

Side:
Garlic and rosemary bread rolls

Desert:
Apple and cinnamon crumble with custard

Method:
  • Dice 4 bramley apples and line the bottom of a billy can with them, add a bit of brown sugar and cinnamon. (We stewed the apples before which resulted in them being a bit soggy, hey ho, lessons learnt)
  • Make up the crumble mix with half a bag of flour, half a fist sized chunk of butter and half a bag of sugar, rub together until you get a crumble.
  • Put the crumble mix onto of the apples and sprinkle some sugar on top.
  • Place crumble pot inside another, larger, pot with a bit of wood in the bottom to create a gap. Place in fire with a lump of burning wood on top.
  • In a big pot, boil a load of water and put a couple of bags of pasta in, about 1kg, we used fusilli, other pastas are available. this may take a while to cook.
  • While that's happening get a bag of strong white bread mix and make up with water, rosemary and chopped garlic, make into 10 balls about peach size, wrap in foil and place on grill above fire, turn regularly.
  • Chop a couple of onions and some chorizo, fry off on a lid and set to one side to keep warm.
  • When the pasta is cooked pour out most of the water, leave half a cup in the bottom.
  • In the pasta pot, put in 8 eggs, the onions and chorizo, some flat leaf parsley, some garlic, and some black pepper. Stir until the egg is cooked.
  • Dish out the carbonara and bread rolls for main and when you're done the crumble should be ready, serve the crumble with cold custard to take some of the nuclear heat away.

Ingredients:

Carbonara:
1kg pasta
8 eggs
1 chorizo ring
2 onions
flat leaf parsley
black pepper
garlic
trex

Bread rolls:
Small bag strong bread flour mix
Rosemary
Garlic

Crumble:
White flour
Butter
Brown sugar
4 bramley apples
cinnamon
Custard

I think we got about 10 portions of pasta and 8 portions of crumble, nice easy recipe for a large group and the ingredients came to about £24.
