allready got my first batch last week, flowing quite fast to say its still a bit early

Hi,

I had to do a bit of un-planed pruning to my Birch tree yesterday (due to damage from the winds) plenty of sap flowing, so I bottled a few litres.

Whats the thing to do with it?

I've heard of making ice cubes or just drinking it but is there any other uses?
