I have 10l of alcoholic ginger beer on the go due for testing in about 10 days time. I have made plenty non alcoholic ginger beer (using dry powder ginger to make a "plant" not root) very easy and especially fun for kids this sort of recipe http://www.bbc.co.uk/dna/h2g2/A634664. I am basically doing the same as non alcoholic but leaving it an extra 3 weeks letting the pressure off occasionally.
