A semi-truck carrying 30,000 pounds of jalapeños rolled over in the 13000 block of South Interstate I-35 just north of Buda this afternoon: http://atxne.ws/UVCRAF

Now if we could just flag down a truck full of tomatoes we could make some salsa!

Hmmm. Never tried it on a pasty. I've had pasties (over there) The nearest thing here would be empanadas.

Nothing to it Steve - its

  • A pound of beef skirt coarsely minced
  • A pound of good waxy spuds peeled and cubed
  • Half a pound of swede peeled and cubed
  • Half a pound of onion finely chopped
  • Salt and loads of black pepper

Mix all the fillings by hand (raw) in a big bowl

Make shortcrust pastry and cut it into dinner plate sized circles. Put the filling in and crimp edge (look on youtube for how)

Brush with beaten egg

Cook for 45 minutes on Gas Mk 3 / cool oven / 170c

Done

Can you make the chilli jam with tinned jalapenos or do they need to be fresh ones? It's just B&M have these massive tins of them for 99p a pop, I think at least a kg in each. I let the eldest put one in the basket with the vague thought of chucking what we don't use in the dehydrator.

Ah well, a fair few will be eaten and well see how the rest dehydrate.

They won't dehydrate well. Again, for that you need to start from fresh. And even then, they do better to sun dry them.

That said, just transfer the excess from the tin to a jar with a lid (including the vinegar from the tin) and chuck 'em in the fridge; they'll keep for a year or so there.

The first post reminds of the second day after I had moved to the US, I was listening to the traffic report over breakfast when I was announced that On intestate 93 southbound, coming into Boston, a semi had jackniifed and fallen over and spilled its load of live lobsters all over the road. Thousands were reported to be making a break for freedom.

I thought it was iffy when it said on the can use within a month. I think they are in brine, will that do in the jar? As it happens herself brought home 3 big jars of Sarson's malt pickling vinegar today. While I was out I'd bought a big jar to pickle some eggs in. The bought ones don't have enough bite for me and seam greatly overpriced.

cheers!
