Is there a slot behind the knob and it slides?
fooled me for a start as it looks like old steel hinges giving them the black paint

Yep it slides, the handle slides past the edge of the door so it is obvious it is latched.

It takes a bit of head scratching in places but it is do-able, I am without access to either of my lathes at the moment (long story) so had to come up with a different method......
