I've been looking for some local wild garlic for years, but for some reason I just never come across it around here.

As it turns out, we are about to purchase a piece of land, and there's a whole load of it growing on site.

She's making a chicken soup tonight, so I'm thinking some wild garlic bread might go quite nicely.

What are some other good uses?

I also like to make a wild garlic butter which you can freeze and then melt on top of things like steak or fish: Chop up the fresh leaves finely (use as many as you want, but not so many that the butter will no longer hold it all together), stir into softened butter with a bit of salt, black pepper and lemon juice. I tend to then put it on a sheet of baking paper in a big rectangular dollop and then wrap it up like a sausage, twisting the ends of the paper to create a consistent sausage shape.

Slice of that on top of a steak whilst it's resting and job's a good 'un.

That sounds pretty good.... I think I'll be getting some steaks in.

The best use for Wild Garlic i think is to take the flower buds ( Obviously not all from the same plant ) and pickling them in clear vinegar with some pickling spices and possible some chillis.

Excellent little thing to add to some cheese and cold meats.

I've been looking for some local wild garlic for years, but for some reason I just never come across it around here.

It's a funny plant, it can be very invasive but it also doesn't seem to like some places. There's a mass of it down our road but only a little in one place on our land.

If you want it to spread I'd leave the flowers to seed, they seem to spread best in leaf litter and open soil.

We use the leaves in all sorts of things, in place of onions or leeks. Goes well in quiche for example and the leaves on a pizza were very good. If you have plenty of flowers then the buds are good eating, I've used them in stir fries whole or sliced.

A couple of leaves in fresh bread and butter or a cheese sandwich are lovely.

I transplanted some a few years ago into our garden, and now self sets and grows pretty much wild in lots of places, including in the lawn. Best eaten raw, not much flavour left if you cook it.
You can of course stir it in raw on cooked dishes like pasta Aglio oilio (just olive oil, sweated chillis and garlic, yum, bread if you want to).

Now that is interesting as brocks love roots.

West Woods, near Malmsbury is famed for its bluebells.

And guess what? Its heaving with brocks.
