Visit a ship's chandler, some place like Whitby.
Fish people have worn stainless mesh gloves for decades (I did in 1965).
I wouldn't have a single finger to lift in salute.
Ask your local butcher if they have a source.

Lots of wood carvers use them
Everybody agrees that none of the gloves protect from stab cuts.
 
I recommend to do things slowly.

Think about, what you are doing. Think where you cut in an hit in. Think about what the axe or knife will hit, if it fails.

There are a few very good videos from Paul Kirtley on his blog about how to use an axe. It's more or less the same with a knife. In the Kuska Video here in the forum you can see some good recommendations too.
