How do you put the side pockets on a bergaus crusader or cyclops roc?

If it's the newer version ,use the zips.
If it's the older version they are fixed with rigid plastic strips on the pack and pockets.
 
Crusader:

Zip on the BERGHAUS side pouches. PLCE ones will not fit an unmodified Crusader ( well you can get them to fit upside down and by badly straining the zip).


Cyclops Roc:

The side pouches for this bergen were a Berghaus generic side pouches that had a hard plastic back. You just undid the compression straps on the side of the bergen and threaded them through the slots on the plastic backing. Job done. These pouches also fitted the Munro... They were a bit of kerfuddle to take on and off however.

Cyclops Centurion:
Was a bergen that was basically a Roc with fixed sewn on side pouches a good bit rarer than a Roc or Crusader.

At some point in the late 80's early 90's the Crusader was replaced with the Vulcan which basically had a zipped sleeping bag compartment on the base ( good move) and an updated Cyclops 2 back system (better move).
Early ones continued to use the old Crusader style of Side Pocket zips. After the introduction of the PLCE system Berghaus updated the Vulcan with PLCE compatible zips so Issue sidepouches could fit.

With PLCE pouches you have to use a yoke to use the pouches as a daysack. Berghaus ones (and also the LA Sting) come with there own shoulder straps...
