how 2 make bbq sauce ?

Here's mine, I make it fresh each time I BBQ.


3 cloves garlic crushed
1 red onion finely diced
1/4 cup raisins
1/4 cup fresh butter

1 can tomato paste
1 cup black molasses
1 cup red wine vinegar
1/4 cup Worchestershire sauce
1 cup water

2 cayenne peppers finely diced (or more)
2 Tsp fresh Cilantro finely chopped
1 Tsp salt
1 Tsp black pepper
1 tsp ginger
1 tsp cumin

Plump raisins by bringing to boil in just enough water to cover. When soft mash to a paste.

Saute onion in butter, add garlic and raisin paste. Simmer until very soft then add rest of liquids. Bring to boil then simmer over low heat stirring often for about 30 min. Add spices and let simmer another 30 min. to several hours. Add a little water if it needs thinning while it simmers.
 
^^Very similar to my own, but I've never used Raisins, might have to try that.

I sometimes use Tamarind paste in mine for an extra dimension of sweet and sour...

For reference, Cilantro is known as Coriander (leaf) here in the UK

Butcher had eight big strips of belly pork for a fiver, so I made some today. it tastes great, I cant wait to see how the meat cooks up in it
