I believe that ideally you want live beer, rather than some pasteurised canned muck... It provides some yeast to help the damper rise.

I may need to try and pack some homebrew for the next Scottish meet... ;)

The BASIC food of the roman empire was a daily issue of beer,olive oil and wholemeal flour.
Rub some oil into the flour,enough live beer to make a dough and bake in a clay oven made with 2 clay saucers. The bottom one with the dough in it and another inverted to form a lid. place on embers and cover with more embers. about 30-45 minutes is enough for a 'one-man 'loaf
