Only need to stick in a small knife or drill a small hole, not shave off the bark and cambium. It's a lot easier to direct the flow that way as well, you sort of had the right idea. Better luck next time, and the sap will be running for a while yet so still time to perfect your technique!

Thanks for the advice guys, and I also prefer harsh criticism. If you soften the blow then I might not take it as seriously as I should. I'd hate to damage any more trees because I ignored valid advice.

We realised our mistake relatively quickly and did the best we could to fix it. Hopefully it will heal quickly and we now know for next time.

Again, sorry for damaging the tree, and thanks for all the advice
