Hopefully this year I’ll have some arrangements at home for an outdoor fireplace where I can cook, I have quite a few books but mostly about wood fired pizza oven cooking, I want to turn it round to cooking over fire, I have a fair bit experience with this but a few books to stimulate the imagination and keep the project alive would be good!

Any recommendations please for books of this genre!

If its a purpose built cooking area I'd consider a dedicated Hangi ( underground ) cooking pit.

I’ll need to check out what a Hangi is, I’m planning something like this

upper case and lower case

Well -, I'd call that an outdoor BBQ area. I was thinking more a dedicated ground level firepit.

It all works however.

I'd be giving that some serious over thinking before you build it however. Make sure you make the most of the space and what ever gadgets or options you want to build into it. As ever Youtube is your rabbit hole friend.

It’s just a big flat surface and you create the fire in there and create your own coals, I’ll line it with fire bricks to absorb the heat as well!

The bits and bobs in there are free floating rather than built in, I’m ok at metal work so I’ll knock the stuff up myself! Should be fun getting it all right!

Ok. If you fee thats enough.

I'd consider about making or fabricating some way to turn the main chamber into a large smoker - you'd have grills the right size in there so if you could provide a seal and restrictor at the top of the chimney you'd have a great smoke chamber that could smoke food en masse.

I'd also consider having a large spit go through either side of the walls with a turning handle on the outside of the chimney - it would make cooking and turning a large ( or several smaller ones ) animal super easy.

Just ideas however.

What are you looking for in the books, recipes? techniques? or a combination of both?

Floyd on Fire - Keith Floyd
Hunter Gather Cook - Nick Weston
Fire It Up - Andrew Schloss & David Joachim

Also look at Braai cooking, plenty of resources out there.

The top 3 I have are:

The wild gourmets - Guy Grieve
Wilderness chef - Ray Mears
A Cook on the wild side - Hugh F-W (I think this was his first book from the 90's)

Been on the lookout for that one myself. It was his first tv show too and iirc he had a narrow boat, and I’m sure something like a camper van too.
Yeah that's the one, I got the book in the mid 90's when I was a kid but always loved it. I went to one of the river cottage open days about 8 years ago and thought I'd take the book and get it signed. When I presented it to Hugh (and apologised for it being a bit dog eared) he absolutely loved it and hadn't seen one for years, he was particularly happy it was worn and used.

I think the first series he was on a narrowboat and the second series he had a converted Land Rover.

Just found it here for £3.60, well worth it.

Hugh seems like such a nice chap, that’s really cool you met him and he signed it for you.
Myself and my uncle had always planned on doing their “pig in a day” course. He first taught me to make bacon and sausage, unfortunately he passed last year before we had chance to do the course.

Yes that was it, the converted Land Rover!

Fire to Fork Harry Fisher (also on youtube)
