Hi all,

Im wanting to experiment with chutney, can anyone recommend a good chutney base for me (ie. the amounts of sugar, vinegar, apples, onion...etc), before i start adding other ingredients and flavours?

I'd start with a tomato or green tomato chutney recipe.

500g onions
1kg tomato
500g apples
4 garlic cloves
1 red chilli
4 cm piece ginger
250g brown sugar (doubled for green tomato chutney)
200ml vinegar, cider vinegar is my favourite here

Bung all the chopped ingredients in a pan and boil them until the juic has gone nicely sticky but not caramelised. Then pour the mixture into sterilised jars while it's still hot.
