Boned red haunch

I've thawed out a 1.2kg boned bit of haunch from a hind I shot in February.

Any tried and tested recipe suggestions gratefully received! Ones I've found so far call for 2 days of basting and we're hoping to have it tonight!

All done now, just roasted it as normal, tastes great. Just could do with a tart sauce/jelly.
