Today I Cooked...

Made a sort of cassoulet. Sausage, onion, and root veg. The topping is breadcrumbs, herbs, paprika and (quite a lot of) cheese.

Love a proper (South of France) Cassoulet... I make them occasionally but they're a lot of work.

I'm making a slow cooked Beef Madras tonight, pilau rice, naan breads... Wont be ready until nearly 1 am..... lol. But thats when i eat. as a general rule.

Looks banging that though mate.
 
Son2 wanted pasta, so I made pasta with cheese sauce and broccoli, and it looked good enough that I had some too....and have suffered hours of indigestion...I know better, I don't digest milk easily/properly, but I love cheese sauce.
Not doing that again, I have had the most miserable night trying to sleep it off.
Son2 had a second helping :rolleyes2:

I also made apple turnovers :) We had a bumper crop of apples last year and I canned twenty jars of them. I didn't even add sugar, they are desert apples and didn't need any. The turnovers were just brushed with almond milk and given a dredge of cinnamon sugar.
Those were good :D
 
Just before Christmas I bought a fresh octopus in the market and put it in the deep freezer.

A couple of days ago I defrosted it and yesterday cooked it in the oven on a low heat fire an hour and a half with tomato, red and yellow pepper, olive oil, salt, pepper, white onion and a splash of pastis, then separated the tentacles from the head and the web between tentacles.

The tentacles are sitting in the fridge to be grilled on the BBQ this weekend. The head cut into strips and web went into a terrine with the juice thickened with gelatine and all the rest.
 
I cooked an octopus with tomato and onion, slow and low in the oven, last week. Took out the tentacles and the rest made two pots of stock and a big loaf of brawn. At about 14h today I fried two of the tentacles with mushroom and bean sprouts in peperoncino olive oil and a pinch of Greek oregano.

Followed by a bit of bread to mop up the juice and then a bit more bread with stilton.

Not exactly cooking, but I made some sourkrout with juniper berries for added flavouring. It will be ready in a week or so. Looking forward to eating it daily as part of my re flora and fauna- ing my gut biome after all those weeks of heavy antibiotics over Xmas and new year.
The bottles of pills are so expensive, and I do prefer natural products anyway.
Thinking about kefir again, but I'm having fun making natural live yoghurt, last one was manuka honey flavoured. Expensive, but Yummy! A bit sweet, lovely on cereal in the morning.
Also made some gluten free bacon tomato and cheese bakes again. Can't put up a pic as they didn't last long enough, (both times) despite the pastry(jus roll g/f) being not so great. Its passable...just! Better than my home made efforts anyway!
 
A toasted pikelet with melted cheese for breakfast.

At midday: the last of the tentacles fried with half an onion and four shiitake mushrooms.

This evening: steamed chicory wrapped in boiled ham, smothered with cheesy sauce (the other half of that onion, pepper, salted butter, flour, milk and lots of grated Emmenthal).
