It's not difficult at all. Scales pop off easily, warming them just limits damage to the mounting holes so you can potentially re-use them. Pins need drilling carefully but can be re-used it you're removing a layer or two. Backsprings are not very stiff so easily go back together with a twist and hold their place while the next layer is added. The fiddliest part is peening the pins over smoothly and with the right amount of compression.
Even if it all goes pear shaped, you can take it apart and do it again. Practice and all that.
Worth a try to make your perfect SAK, if such a thing exists?

To my mind, considering the size of the range, I’d take the best compromise and not bother changing it. On BB and EDCForums there I used to see some amazing mods and handle changes, like distressed brass and exotic woods. I reckon that’s the only thing I’d change.
What would be really handy would be an alternative to the pins, something threaded so adjustment could be made to accommodate the number of layers and tweaking the stiffness.
And that 2 knives will be needed in order to create the perfect one.

Were I to attempt to solve the OP question using Victorinox components I would make the two blades work from the same end and build a much bigger handle with an oval cross section onto the frame.
That looks possible from what I can see.
For a couple of years now I have pondered building an Opinel blade and saw into one handle. My imagined working title is Opinel Bon Feu which indicates its function.
The Opinel #12 saw is a pull saw which limits its function. (The pay off is a very narrow kerf which cuts quickly, an excellent foraging tool) Maybe a Victorinox saw could fit.
If anyone is bringing a Victorinox knife equipped with a saw to the Making Moot I’d like to see it in operation.
I’ll bring a vernier just in case.

This is looking like fun if you are a multi-tool user.
I’m imagining a rack with a range of handles and the tool set slotted into it.
You could build any knife you wanted like Victorinox Meccano.

Well I’m half way there!!!!!!Pattree, how about a Opi #13 and Silky combo?
There are a LOT of issues, not least the truck to move it around. The Géante is heavy!!!!

Despite a series of idiotic YouTube reviews, it isn’t a folding machete or an axe. The flat grind on the wide blade means that there is very little metal behind the edge.
It is designed for the same function as most 22cm blades in common use: it’s a carving knife.
