Storing/preserving jack by the hedge?

Don't know how it would work out, but you could try pickling it in brine like the Chinese do some of the fine cabbages ?
Just an idea.

if you only want to use it toseason food with you could try drying it then crushing it up and using like you would any herb. if you wanted to keep it fresh for salads then you could put it in a ziplock bag and freeze it, but i dont know how much of an affect that would have on the flavour.

I remember seeing in food for free a jack by the hedge sauce to be used in lamb dishes (similar to a mint type sauce) - i would image this would keep nicely in the fridge in sterilised jars??
