Stem Ginger in Syrup, any recipes?

Made some a couple of Christmases ago - I'll ask t'other half / high command / SWMBO if she can remember the exact details as, for the most part, I was the quality control / destruction testing part of the operation 
If was good though - a bit full on ginger firey for some tastes perhaps, but I liked it far more than supermarket stuff.

I use the stem ginger in syrup a lot, I'd love a good recipe for making some that's flavourful not fiery.

Found this online, not tried it yet but thought I would update the thread!
Cook one-half pound of peeled, sliced ginger in a heavy saucepan with one pint of water and one-half pound of sugar, stirring frequently, until the mixture becomes syrupy. Pour into small jars and seal.

Well that sounds simple enough 
Now to find ginger, at this time of year, that's not all stringy

Chinese supermarket at the point in Glasgow will have loads of ginger, usually cheap as chips!!! I plan to try it soon as I have a recipe for Ginger Whisky i want to experiment with!!!
Is whisky mac no crabbies and whisky? this recipe is a whisky and stem ginger plus its syrup and raw ginger all put in a big tub like sloe gin then left as long as possible!!
