Coat the meat in seasoned flour, flash fry to seal the meat, then pop into a slow cooker with chicken stock, tomato paste, a faggot of herbs and anything else you fancy.

here's an idea, I have a Roman recipe for "Sweet onion sauce", which im sure would go well.
Grind together pepper, celery seed, coriander, caraway & mint.

Add to chopped dates & onion.

Blend with honey, vinegar, stock, olive oil & wine.

Heat, then thicken with well-beaten egg yolks.

pour over the roasting meat, and cook together for the last 20 Minute's.

....Just typing this made my mouth water, Fruor!(enjoy)....

so I got a freeze full to the furry littel vermin this weekend. Thought I try some different to stew/casserole etc.

Squirrels in brown gravy

heat enough oil to cover bottom of cast iron skillet
roll quartered squirrels in flour
brown squirrels on all sides and remove
add a bit of oil and flour and brown lightly
add water to skillet
1 can of cream of mushroom soup or fresh mushrooms
1 can of diced tomatoes with juice
add squirrels back to skillet and simmer till meat falls from bone

serve squirrels in gravy over rice
turnip greens
cornbread..buttered heavily
iced sweet tea

Grains of paradise are an old spice that has nearly dropped out of use now. It used to be used side by side with pepper but in the 16th Century when pepper became hard to get because of some problems with Spain, it started to be used as a substitute.

Once we had sorted out the trading routes again people seemed to drop the substitute in favour of pepper and it almost disappeared from our kitchens.

Shame really as I think it has far more character. I always put some in my pepper mills at home and we use it a lot in ancient recipies.

By "grains of paradise", do you mean peppercorns, cardamom, or some other spice?
No.... but it does go by a few other names. Try doing a search on Guinea Pepper and Melegueta Pepper .... Its quite hard to get hold of now though I think.

Anyone for Squirrel soup?

This soup is good served over Chinese noodles with one cup of shredded cheese on top.
In a heavy pot combine cooked squirrel and chicken and all ingredients. Cook in a slowly, stirring occasionly, for three to four hours or until thick.
If the soup doesn't get thick, you may add broken, uncooked spaghetti and cook until thick.

Ingredients:
4 squirrels, cooked, boned reserve broth
2 frying chickens, cooked, boned reserve broth
3 large onions, chopped
2 small potatoes, cubed
4-5 carrots, sliced
1 (16 ounces) can cream-style corn
1 (16 ounces) can tomatoes
1 (6 ounces) can tomato paste
2 beef bouillon cubes
4 hot peppers
7-8 drops Worcestershire sauce
1 Tablespoon brown sugar
1 (8 ounces) can water chestnuts, chopped
salt and pepper to taste
5 1/2 cups squirrel broth or chicken broth

or Squirrels in cream sauce

2 squirrels, cleaned and cut into serving pieces
~ 1 medium onion -- finely chopped
~ 1/2 tsp leaf thyme
~ 1 - 4 oz can sliced mushrooms -- drained
~ 1 cup beef bouillon
~ 1 cup sour cream
~ 2 tbsp lemon juice
~ 3 tbsp flour
~ minced parsley

Soak squirrel in salted water overnight in refrigerator.
Remove squirrel pieces and rinse. Discard salted water.
Place squirrel, onion, thyme and mushrooms in a crock pot. Pour in bouillon.
Cover and cook on "low" for 8 to 10 hours.
Remove squirrel to a warm platter.
Combine sour cream, lemon juice and flour. Stir sour cream mixture into crock pot. Turn on high and cook until thickened.
Spoon sauce over squirrel and sprinkle with parsley.

or Squirrel dumplings!

3 squirrels, cut up (All hair removed.)
~ 1 egg
~ 2 cups plain flour
~ 3/4 cup broth
~ 1 teaspoon salt
~ salt and pepper
Boil squirrels in four quarts of water until tender. Remove squirrels from broth, let cool, then remove meat from bones. Set aside.
In large bowl, mix flour, egg and one teaspoon of salt with 3/4 cup of broth and roll into ball.
Strain the broth to remove any stray shot then resume boil. Return meat to boiling broth.
On a floured cutting board, use rolling pin to roll the dough ball to a thickness of 1/16 inch. Cut into 1-inch wide strips and drop strips one at a time into the boiling broth. Gently shake pot after last dumpling is added to prevent sticking.
Cook approximately 10-15 minutes until dumplings are tender. Salt and pepper to taste

Squirrel Cacciatore
2 - 3 squirrels cut up in pieces
~ 1/4 cup flour
~ garlic salt
~ black pepper
~ 2 tbsp oil
~ 1/2 tsp oregano
~ 1/4 tsp ground cloves
~ 1 4oz can sliced mushrooms, drained
~ 1 medium green pepper, chopped
~ 2 onions, sliced
~ 1 rib of celery, chopped
~ 1 15oz can tomato sauce
~ 1/2 cup dry white wine
~ 1 small can(2oz) ripe sliced olives

Shake the squirrel pieces in a bag with flour, garlic salt and pepper. In a Dutch oven saute the pieces in the oil until golden brown.
Add the remaining ingredients, except for the olives. Cover and simmer over low heat about 1 hour, or squirrel is tender.
Stir in black olives simmer 10 minutes more.
Serve with rice or noodles if desired.
