As the birch tapping window gets ever closer I was interested to see that Waitrose is selling birch sap in the fresh juice section. Despite the appearance of the word water in the title is it actually 100% sap. Not cheap at £2.49 but it offers folk a taste who haven't got the opportunity (or maybe skills) to tap a birch themselves.
