Whilst working up here in the Shetlands I was given some really nice Oatcakes and eventually managed to prise the recipe.
Have used it a few times now and have also added Cranberries to one mix and regularly add Sultanas. Did try adding Honey but it's very difficult to roll out and you couldn't taste it.
The finished cakes are similar to shortbread as a fine oatmeal is used.
Here goes.
8oz Margerine
12oz Fine oatmeal
8oz Self raising flour
3oz Sugar
1/4 Teaspoon of salt (original recipe was 1 teaspoon which is too much for me)
1 egg
Mix all of the above, roll out to around 1/4" (6mm) thick, cut as desired and bake in a 150 Degrees C oven for 20 to 30 mins.
I see no reason why this cannot be done on a griddle over an open fire.
