Thought I would put this up as an easy basic cake recipe.
Keeps well, tastes great & good for a snack when out & about.
Very forgiving recipe, use plain or wholemeal flour & it is just denser

Easy Fruit Cake Recipe
  • Ingredients:
  • 8oz (200g) mixed fruit
  • 2 medium eggs (beaten)
  • 6oz (150g) brown sugar
  • 6oz (150g) self raising flour
  • 4oz (100g) margarine
  • 1 level teaspoon mixed spice
  • Pinch of salt

Method
  • Place 8oz (200g) mixed fruit into a saucepan and cover with cold water
  • Bring to the boil and simmer for 5 minutes
  • Drain and keep in saucepan
  • Add margarine to the fruit and let it melt
  • Add beaten eggs, sugar, flour, mixed spice and a pinch of salt
  • Mix well and pour into an 8 inch (20cm) tin, greased or lined (or equivalent loaf tin)
  • Bake at 170°C (340°F, gas mark 4) for approx 1 hour
  • Remove from tin and allow to cool on a baking rack

Nice and straightforward, and very do-able :)
I have somewhat of a glut of orange slices in syrup....I think I might give the cake a go but put the orange slices on top/bottom.

Be in good time for afternoon tea too if I got busy just now :)

:facepalm: Corrected, Sorry about that.

340C is a bit warm, any other forum would have ignored it but given that some of this lot have forges and like a challenge, best to be careful.. :biggrin:

The cake is a lovely success :)

I reckon it's a 'forgiving' type recipe. If you don't have, then change out with something else.
I didn't have mixed fruit, so I used raisins, glace cherries, cranberries, and some chopped pineapple. I used the orange slices on top, and even using gluten free flour, this turned out really well.
