Recipe for Birch sap wine?

Don't ask me why, but out of the blue today I have decided I absolutely HAVE to make some birch sap wine next spring.

Just got it into my head that it would be sublime.

So, anyone done it before? Any good recipes?

Got some that we made in the spring, and have just started drinking now! It's bloomin strong, but perfectly drinkable... will find the recipe for you. I know it used raisins - and tbh, I'd be tempted to use less, or something else next time, as they tend to give it a sort of "sherry" edge.

It's crazy, but I've somehow got it into me head that I just have to try this - interesting that it uses raisins?

found this wine recipe - looks simple enough - adding fruit like raisins is i assume essentially how they make wine taste different (so much of the NZ wine tastes like gooseberries!). I'd be intrigued to know what birch sap wine tastes like with nothing added other than the basics.
