Ray's Kebabs

Caught the end of a Ray program on sky the other day. He had made some nice looking kebabs with Salami.
Anyone know what else he put on them?

The kebabs were salami and tomato with a lime leaf and young flower salad, I can't remember what the flowers were though

Was it wild garlic flowers? or possibly crab apple?
I think that's in the four-seasons episode isn't it?
