Having made many leather pouches and bags etc and carried various things in them, I am curious about the Saami style coffee bags.

What prevents the smell or taste of leather from imparting itself to the coffee? Do people line them or just like the taste of leathery coffee perhaps?

Any pointers will be gratefully recieved as I am hoping to get to making me a few :)

Most people line the leather bags with plastic zip-lok bags before putting coffee in. Stops moisture and leather tainting the coffee, keeps it fresh.
 
I just toss the coffee in without bothering about the taste (not that I`ve noticed any leather taste of my coffee).
Most people I know do the same thing. No liner used.
I have never had any trouble with moisture either.

My bag is made of bark tanned reindeer hide.
