The season does seem late this year for everything except shaggy parasols.
The smallest ones I'll preserve in olive oil, the largest I'll dry. For my breakfast I gently fried some choritzo to release the fat and cooked them with sauted new potatoes.
Tonight its pheasant and beefsteak fungus casserole!
