Pancake Day

I’m stuffed! And they were brilliant, sadly I’m getting to the end of this staple I picked up in Norway that’s in every Norwegian home! Maybe I need to go back to restock!

I decided to make mine as mini pancakes so I could keep mine rolling while I was cooking everyone else's in the regular sized pan.

Works well - more edge area for that crispy goodness!!

We had ours as a dessert.. Folded over, with caramelised apples, cinnamon, and Cornish clotted cream ice cream on top.
