The best wine, cheese, bread and meats are made by expert amateurs. Mass produced food and drink is made down to a price, not up to a standard :)

I have eaten home cured ham beyond anything Fortnum and Masons food hall carry. It was smoked up a cottage chimney!

In a past life, I'd start with 25 x 36lb boxes of Zinfandel, power crusher, over 2 x 45gal primaries.
The only rationale for owning a canoe paddle.
450l of award-winning Zinfandel for about $0.75/liter.
In that day and time, cork prices were the killer, even 2,000 at a time.

I made a little bit of fresh cheese annually over some 30? years.
I liked it even as "blah" as the fresh taste might be.

I like to bake all sorts of yeast breads. Week in and week out,
even when I'm on the road visiting friends, I take a kit to surprise them.
