offal?

just finished my tea which was fried liver and onions with mashed spuds (lambs liver by the way). just wondering what everyones favourite offal recipe is, it can be any piece of offal you like.

Liver, kidney, lungs, spleen, cut into 2" x 2" inch pieces, on a 1/4" diameter spit, salt, pepper, oregano, wrapped in the animal's entrails, slow roasted over a fire. In Greece we called it "kokoretsi", it's a traditional Easter day grub(together with the whole lamb roasted on a spit) and this year about 900,000 of said "kokoretsi" are expected to be consumed on Easter day!

Kidneys fried up with garlic, mushrooms, paprika and little bit of red wine or sherry. Liver and onions is also good as long as the liver is rare.

kidney - roughly chopped with onion and bacon.

serve with brown rice and the juices from cooking.

often a tad salty but it is rather yummy! :D

you know i've got a major hankerin for kidneys done with some fresh ramsons in place of the garlic there Treadlightly, serious want for kidney now heh
