Has anyone heard of the use of net bags in open hearth cooking? At one of m net making demonstrations someone mentioned this technique and promised to send me more information (but never sent it), He thought the net bag was to suspend a cut of meat in a stew pot. Any information will be appreciated. Tony

Not quite the same, but capons are boiled for soup stock before roasting and they are suspended with a kind of knotted string cradle to stop them touching the pot bottom and sides. It means the skin stays intact instead of sloughing off. We also have a cloth (called a cloot) used to boil puddings and the like in pots and again the strings used to tie the cloth can also be used to keep the pudding off the bottom of the pot.
