Boil potatoes for usual length of time, add cropped leeks for last 5 minutes, drain, then sprinkle with grated parmesan. Goes with anything. Any leftovers make excellent omelette filling.
Peel and chop leeks, dice smoked Bacon (streaky is my favourite), sweat the bacon down on a low heat to release fat/flavour and add leeks (bit of unsalted butter too if needed). When done serve on top of a chunk or two of toast or as a side to roast chicken portions/steak; thicken with a little cream, I use double cream over a low heat.
