"Johnnycake" - the name comes from "journey cake" a travelling ration and varies greatly from place to place.
1 cup white cornmeal
1 teaspoon salt
1-1.5 cups boiling water.
Some people also use eggs, sugar and butter added.
Some use half water half milk - some use what they have to hand, making spicy, savoury, fruity or plain versions.....
Mix salt and cornmeal, pour on boiling water, stir until smooth.
Drop spoonfuls onto a greased bake stone griddle or fryingpan.
Cook for about 5mins each side
