I'm going for a totally different approach to the syrup this year - finely grating the pulp, adding a little water and boiling in a huge pan. I will then use a jelly bag to filter out the pulp. I think this might give a higher sugar yield (its the technique I used for sugar beet - effectively dissolving out the sugars from the pulp).

No idea if it will work....but its a lower tech solution so here's hoping!
 
That's fantastic, nice work. I'd love to have the space to do more homesteading stuff as well as bushcraft. Someday, maybe.
 
A nice read, and detailed enough to follow. The Yacon sounds interesting, and being someone who inspires to be self sufficient, it looks like something to try out in the future. Thanks for your insight.
