I have a working forge at home and have used it for arrow heads, tongs, and all manner of other things. As of a few days ago i wanted to try a knife. Whats the best way to go about it???

sorry. couldn't resist

Only work the steel at a mid red to mid orange heat (different steels like dif temperatures, but that's for most tool/spring steels). don't hit black or it will crack (or warp at quench) don't hit at yellow or white as some steels crumble, others just get awful grain growth

point the bar
flatten the length you need to near final thickness
bend it into hte cutting edge
forge bevels evenly both sides (even blows to stop warpage later)
draw tang or forge flat
straighten it out
normalise it a few times
harden it
temper it
job done ;)
