Right, seeing as it is the Yuletide month, I thought it might be interesting to see if anybody has a traditional, different or favourite recipe for the festive season? Also, does anybody make use of the wild food resources for Christmas?

Here's my winter compote:-

Ingredients:

A handful each of dried figs, prunes and apricots

Demerara sugar - two generous handfuls

1 cinnamon stick

6 cloves

Orange juice

Slosh of brandy (optional)

Method:

Mix the demerara sugar with some water over heat to make a syrup. Add the cinnamon stick and cloves and simmer for a couple of minutes. Add the fruit and add a little orange juice (the syrup should be the consistency of thin custard) and he brandy (if using), and simmer for 15 minutes or until the fruit is soft. Do not allow to boil.

Remove the cinnamon and cloves before serving.

Serve hot with double cream, ice cream or creme fraiche. Also delicious cold for breakfast or reheated over a camp fire.
 
5 parts Plymouth Navy gin, 1 part Nolly Pratt. 1 slice cumuber 2 olives.

Edge glass with cucumber
Add gin and Nolly Prat to lots of ice stirr for a minute. Decant into prepared glass as 2 oilves on cocktail stick.

Christmas breakfast - help you cope with the day to come.
 
I'm tempted to have a solstice Xmas BBQ if the weather is in any way clement so I'd love some festive themed simple BBQ ideas.

Starter: Grilled mushrooms with goat's cheese.

Main course: a joint of venison (get the butcher to bone it out if necessary), with some potatoes baked in the coals. Lots of butter on the spuds, and a good dab of redcurrant jelly on the side. Serve with parsnips - parboil them before finishing on the bbq.

For pudding, baked apples. Core the apples, and fill the hole with demerara sugar and currants and raisins. Wrap in foil to cook, and serve with brandy butter or double cream.
